
Port Aged Puncheon Beer - A Slightly Sour Saison aged on Port Wine Oak Chips & Brett Brux
Introducing Hi-Wire’s first ever puncheon-aged beer. We began with a clean fermented saison which then went into our red wine puncheon to rest for 13 months on port wine chips and Brett Brux, a classic wild yeast strain hailing from Brussels. The resulting beer is a slightly sour saison with huge tangerine citrus and caramel flan aromas. Notes of red wine and oak shine through lending tannins that keep this complex beer dry and drinkable.
